Growing up I loved Betty Crocker and Dunkin Hines cake mixes and frosting pots. That was the height of my culinary skills at age 9. I would make my friends birthday cakes and even school projects with these fool proof mixes. Yup I made a science project with cake. That should of been a sign of my true passion in life. I wanted to make a cupcake reminiscent of those but with wholesome ingredients. The key to those store bought cupcakes were the fun rainbow chip or funfetti frosting. What kids don't love sprinkles? I was more partial to the rainbow chip frosting so I used the christmas chip sprinkles to make a festive Christmas cupcake.  It's December 1st and Im talking Christmas. I waited the appropriate amount of time before posting my first Christmas themed post. These cupcakes are perfect to change up for any holiday or celebration. 

These cupcakes are very chocolatey and not extra sweet. That's where I veered from the store bought mixes. I used Cocoa Rouge Unsweetened Cocoa Powder by Guittard. This dutch processed cocoa powder is a high quality product which yields high quality results. The chocolate wafers I used were also Guittard's Semisweet Chocolate wafers. Using high quality chocolate will change your opinion of baking with chocolate. It tempered beautifully when I made candies or dipped cookies in it. When baked into cakes or cookies there was no waxy or overly sweet flavor. I got both of these chocolates from Good Egg's website. Whole Food's here in the city also sells this brand. 

Now, Im no pastry chef but I can wield a pastry bag like the best of us but today I wanted to be a little more authentic. A little more like my 9 year old self. Nostalgia is a key part to my holiday season. Scoop the frosting or slather it on top it doesn't matter. Ask the little ones to help you it will be the perfect task to let them create their own holiday memories and nostalgia one day. They don't need to be perfect they just need to be tasty. Let them sprinkle extra sprinkles or give them a rubber spatula and let them decorate their own cupcake. I hope these cupcakes bring you a smile like they did for me.

Chocolate Cupcakes with Rainbow Chip Frosting

Yummy chocolatey cupcakes with a simple rainbow chip frosting.

¾ cup of Dutch processed cocoa powder

4oz of semi sweet baking chocolate

¾ cup of hot dark coffee (instant is okay)

¾ cup of all purpose flour

¾ cup of baker’s sugar or extra fine white sugar

½ teaspoon of baking soda – important to be fresh and good quality

¼ teaspoon of salt

6 tablespoons of coconut oil – liquid form

2 eggs

2 teaspoons of apple cider vinegar

2 teaspoons of vanilla bean paste

Vanilla Simple Syrup

¼ water

¼ extra fine sugar

¼ teaspoon of vanilla bean paste

Rainbow Chip Frosting

5 tablespoons of Salted Butter, softened – I used French

2 cups of sifted powdered sugar

¾ cup of heavy whipping cream

½ cup of chip sprinkles – flat circular sprinkles


1.     Preheat oven 350 degrees Fahrenheit. Line cupcake pan with liners of your choice.

2.     In a medium sized bowl add cocoa powder, chocolate, and hot coffee. Mix till melted. Set aside at least 10 minutes. Tip: I like to skip ahead and make the syrup and the frosting now.

3.     In a large mixing bowl add flour, sugar, salt, baking soda. Mix gently.  Set aside.

4.     In the melted chocolate add eggs, apple cider vinegar, 2 teaspoons vanilla bean paste, and liquid form coconut oil. Whisk gently till completely combined. Pour chocolate mixture into flour mixture and combined completely. Do not over-mix. Pour mixture into cupcake liners ¾ full. Bake for 16 minutes.

5.     Set on cooling rack.

6.     In a small saucepan add water, ¼ sugar, ¼ vanilla bean paste and bring to boil. Mixture should thicken slightly. Remove from heat.

7.     Using a skewer or toothpick poke holes in the top of the cupcake. Brush or spoon syrup on the top of the cupcakes.


8.     In a large mixing bowl or stand mixer add butter and powdered sugar. Mix on medium high speed. Should be kind of crumbly. Then pour in whipped cream and vanilla. Whip till stiff peaks form. Fold in rainbow chip sprinkles. Frost as desired.
