Tale of Two Fritter Breads

I have an deep passion for apple fritters. In Hawaii and San Francisco they are hard to come by. But before breaking out my deep fryer I thought making them into something a little easier for the morning routine. Yes, Im guilty of making a big breakfast almost every morning. I need sustenance to live. Doughnuts = Sustenance. Here is the conundrum...

Every family has their favorites some people like light fluffy cake breads some people like dense moist bread. Most days when Im recipe testing someone will complain. One person whats a thick crust pizza someone wants a thin crust. Geez is anyone ever happy. Saving my sanity for another day I decided to make one of each.

Traditional quick breads are moist, dense, and don't rise a whole lot. So if that is your favorite make the first bread. If you like yours cakey and fluffy and a light crumb the second one is your best bet.

Apple Fritter Bread

1 large apple, peeled, cored and chopped into squares - granny smith or pacific rose (a tart apple)

1 teaspoon fresh lemon juice

2 tablespoon granulated sugar

½ teaspoon cinnamon

1/3 cup light brown sugar, packed

1 teaspoon cinnamon

1 large egg

1/3 cup granulated sugar

1/4 cup vegetable oil

1/3 cup Greek yogurt 

1 tablespoon apple cider vinegar

1 teaspoon vanilla bean paste

1 cup all purpose flour

1 teaspoon baking soda

1/4 teaspoon salt

Glaze

1 cup confectioners' sugar – through a sieve

3 tablespoons half & half

Method:

1.    Move oven rack to the lower position and then preheat oven to 350F degrees.

2.   Prepare bread pan by buttering and flouring it. (In the photos I used a 9 x 5 in)

3.   In a small bowl mix apples, lemon juice, ½ teaspoon cinnamon, and 2 tablespoons of granulated sugar. Set aside.

4.   Mix cinnamon and brown sugar in a small bowl and set aside.

5.   Mix Greek yogurt and apple cider vinegar. Let sit for 5 minutes. Then add oil, vanilla bean paste, egg, 1/3 cup of granulated sugar.

6.   Mix Flour and baking soda in a small bowl with salt. Add to yogurt mixture.

7.   Using a spatula fold in half the apples into the mixture. Then place half the mixture into the pan. Take the brown sugar and sprinkle half of it onto the top. Take the back of a butter knife and swirl the mixture into the bread.

8.   Finally add the rest of the dough and spread out evenly. Sprinkle the rest of the brown sugar mixture and repeat the swirl pattern. Finally add the rest of the apples and sprinkle on top.

9.   Place in oven and bake for 35 minutes.  Remove the loaf and place on a cooling rack. While it cools mix the glaze. Once cooled glaze by spooning mixture over bread.

Apple Fritter Cake Bread

1 large apple, peeled, cored and chopped into squares - granny smith or pacific rose (a tart apple)

1 teaspoon fresh lemon juice

2 tablespoon granulated sugar

½ teaspoon cinnamon

1/3 cup light brown sugar, packed

1 teaspoon cinnamon

2 1/3 cups all purpose flour

1 1/2 cups granulated sugar

3 1/2 teaspoon baking powder

1 teaspoon salt

1 1/4 cups fat free milk

2 tablespoons of vegetable oil

1/2 cup French butter or salted butter, softened

2 teaspoons of vanilla bean paste – a must

3 large eggs room temperature

Glaze

1 cup confectioners' sugar – through a sieve

3 tablespoons half & half

Method:

1.    Move oven rack to the lower position and then preheat oven to 350F degrees.

2.   Prepare bread pan by buttering and flouring it. (In the photos I used a 9 x 5 in)

6.   In a large stand mixer place softened butter in a bowl and turn on medium high speed and whip for no longer than 2 minutes. Then add granulate sugar and whip till fluffy. Crack eggs one and at a time and add to mixer and mix thoroughly. Add oil. After the eggs have been mixed add vanilla bean paste.

7.   Now turn the speed down and add 1/3 of flour mixture to the batter and let mix for a few seconds then add 1/3 of the milk mixture. Repeat steps till the batter is completely mixed. Turn off the mixer and remove from the stand. Scrap down the sides.

8.   Fold in ½ of the apple mixture. Place ½ of the final batter into the prepared pan. Then sprinkle ½ of the cinnamon sugar mixture on top of the batter. Take the back of a butter knife and swirl the mixture into the bread. Fill the rest of pan about ¾ of the way full and repeat the cinnamon sugar steps. Finally sprinkle the rest of apples on top.
