Passion Orange Poppy Seed Bundt Cake
Have you ever been in a creative drought? Where sitting and binging on Netflix seems to easier than coming up with a recipe idea. That's been me for like a month. Seriously. I have notebooks filled with recipe ideas and ingredients I want to try but I haven't even tried to buy yet. Motivation stroke after watching Burnt. I had been in the restaurant industry for over a decade and didn't realize how much I missed it till watching that movie. Spoiler if you haven't seen it skip to the next paragraph. There was a scene where the arrogant but gorgeous chef makes a cake for his sous chef's daughter. He presents her the cake and she tries it and tells him she's had better. That scene got me thinking about cakes, then transgressed to bundt cakes, then the realization that I really don't like heavy dense bundt cakes. I want something packed with flavor but light and airy. So after a few attempts I came up with my version of a bundt cake. It's spongy and airy but moist and packed with citrus flavor.
Passion Fruit aka Lilikoi gives this cake a unique flavor that is complemented by the orange juice and orange zest. I used passion fruit puree which is convenient but fresh fruit works as well. Make sure to deseed and then blend the fruit to get a smooth texture. This cake is made moist by the amount of fruit juices we use. If using puree take it out at least ten minutes before starting to bake so it is defrosted. The poppy seeds add great texture and flavor to the cake. The also are a great source magnesium, calcium, and fiber. This cake can be a special breakfast treat, served with tea for a fun afternoon snack, or presented for dessert.
