Strawberry Mini Pies
So Im a hopeless romantic. Like I weep in movies, weep for Grey's Anatomy, and I weep for Facebook video's where people do cheesy proposals. I love princess stories and I don't care who knows it. Seriously, Im still waiting for my tiara. I will sit here and wait...
But when it comes Valentine's Day I don't seem to get all that worked up over. I think it stems from 10 years in the food & beverage industry, and Valentine's Day being the worst day to go to a restaurant. Ticket times are long, people are cranky, someone inevitably proposes in the dessert, someone inevitably gets dumped at dinner, and people always complain. So after working every Feb 14th since I was 17 I decided this isn't a holiday I go all out for. I have a soft spot for Snoopy Valentines, because well I have a soft spot for all things Snoopy. This year I wanted to do something special for myself. I wanted to make myself a Valentine. I can never eat a whole box of chocolates or truffles so that ruled out that idea. So I looked in the fridge and saw I had some dough left over and I had made some beautiful strawberry jam. The fruit was so bright and sweet it really didn't need much. So this is the story how I made Mini Strawberry Pies.
You can really make this any shape you want, I thought about making heart shaped pies or making really pretty fluted crust but then I realized I don't have to impress myself I just have to enjoy it. I think the best part of these babies is the coarse sugar sprinkled on top of the egg wash it gave the pies a nice glisten and a yummy sweet crunch. These are really flexible and can be adapted to many different flavors. If making for a large group you can even buy canned apple pie filling or cherry pie filling. Sky is the limit.
