Me and layer cakes have a love hate relationship. I love them and they hate me. I don't know if it's my lack of cake decorating skills (probably it) or my tendency to start rushing through the final steps of the cake so I can get a slice. So when I was gifted 3 bunches of ripe bananas I knew I couldn't eat all of them before they started to become too ripe. There was only some many banana muffins and fruit parfaits I could eat in a morning. I thought about making another banana foster galette but I thought it was time to challenge myself again.

A few months ago there was the great chocolate cake debacle of 2015, there were tears and mountains of dishes flowing through my kitchen. I was so upset I literally sat down on my chocolate covered kitchen floor and cried. Years have come and gone and my promise to myself to take a cake class had become once of those New Year's Resolutions that fell at the waist side like my waistline resolution. Im not one of those people that can watch a youtube tutorial and reproduce the results instantly. I need practice lots of practice but when you spend hours preparing cakes, frostings, and fillings only to end up with an ugly cake I get frustrated. Then I start calculating the ingredients I feel I have wasted. Don't get me wrong the cakes always taste good but they aren't what you would give a friend for a birthday or a loved one for an anniversary. Today was going to be the final attempt at a layer cake before giving up until I take classes. 

It took 2 hours to finish which wasn't bad considering I attempted three frosting recipes unsuccessfully before settling on a fourth chocolate frosting recipe I haven't used in years. When I began assembling the cake I held my breath and worked slowly. I tried to remember things I had seen in videos and in books and I tried tirelessly to create a perfect looking cake. Was I successful, NO, but it was the first time I didn't cry after frosting the cake. 

But the flavor oh the flavor of this cake. How could I go wrong with rum, chocolate, bananas, and whipped cream? The cake was moist and subtle. The whipped cream complimented the bananas and the chocolate frosting was rich but not overpowering. I urge you to make this cake asap. I am looking for cake decorating classes in the Bay Area and hope to share my experiences soon. 2016 will be the year I accomplish at least one of my pastry New Year's Resolutions. If any of you guys have a suggestion of classes or schools let me know in the comments below.
